Blueberry recipe contest

My oldest grandaughter Emmy and I came up with these biscuits. They taste like a cross between a blueberry bagel and blueberry muffin. And they are super easy and quick!

Blueberry Citrus Biscuits
1 cup self rising flour
1/3 cup shortening
1/2 cup sugar
1 cup frozen blueberries
3/4 cup milk
1 tsp. lemon extract

Preheat oven to 400 degrees.

Cream shortening and sugar. Stir in flour. Stir in milk and lemon extract, making sure all is blended well.Lastly add in the blueberries.Give the dough (should be moist without being sticky)a few good kneads on a floured surface, and then roll the dough to a 1/2 inch thick. Cut into biscuits, and place on an ungreased pan.Bake for 15-20 minutes (all ovens are different)
A few hints:
1- once you add the liquid, be gentle. roughing it up at this point will only make the biscuits tough.
2-Place leftover (if there are any) biscuits in a bread bag. Will last several days.
3- I double the recipe, and place half of the raw biscuits on a sheet pan, cover it with a towel and place in the freezer for several hours. After they are frozen place in a zip lock freezer bag. They last up to a month in the freezer this way. Preheat oven to 400 degrees, place frozen biscuits on an ungreased pan, and bake for 20-25 minutes.They taste fresh baked because they are!
